Rich, chocolate, fudgy dairy free brownies. These are definitely some of the Worlds best Chocolate Chunk Brownies. We all know it’s no secret that I love all things baking. There’s no better time to get baking something sweet in the kitchen then when you have something to celebrate. This month has been full of celebrations, the launch of a cookbook, moving country, birthday celebrations and family getting together. A month full of catching up with family and friends. I always love to be able to offer something sweet, and always like to make homemade gifts for everyone.
I love recipes that are always fool proof crowd pleasers. The recipe I’m sharing below today is super quick and simple to make. While you can make these recipes that tad bit healthier and them still taste great. Special occasions aren’t the time to cut back on all the trimmings, it’s a time to love, laugh and celebrate. This recipe is budget friendly and you can easily find all the ingredients in your local store. That being said I will add some modifications below if you’d like to swap out a few ingredients.
The perfect brownie is fudgy on the inside and has that crinkle top on the outside. Wouldn’t you agree? Brownies are all about that chocolate madness. So make sure you try and find the highest quality chocolate you can.
HOW TO MELT CHOCOLATE
Place your chopped chocolate in a glass bowl, over a saucepan of steaming water. (With approximately an inch or so of water) This is your double boiler. Stir until the chocolate has completely melted. For an easier alternative, why not place your chopped chocolate in a glass bowl in the microwave. Melt the chocolate at 30-second intervals, stirring in between, until melted.

There are two type of people in the world, the ones who hate nuts in brownies and those who love them. I’m a fan of everything nuttyness! And love that extra crunch in the brownie. But for the sake of pleasing all parties, I topped my Worlds best Chocolate Chunk Brownies with a Barebells Cookies and Cream bar.
HOW TO MAKE THESE DELICIOUS BROWNIES
170g melted Dairy Free Butter
250g chocolate (125g solid – 125g melted)
1 tbsp vanilla
25g coconut flour
30g pure cacao powder
1 tsp salt
1 Barebells Protein Bar
Preheat oven to 175°C. Line a square baking tin with parchment paper.
Chop the chocolate into chunks. Melt 125g of the chocolate. And keep the other chucks aside.
Melt the butter and mix in with the sugar, beat in the eggs and vanilla until smooth.
Add your melted chocolate and combine, do not add boiling hot chocolate or eggs will cook.
Combine your flours, cocoa powder, and salt and sift into the mix.
Fold the dry ingredients into the wet ingredients. (Don’t over mix)
Lastly fold in your chocolate chunks. And place in your lined baking tin. Top with a crushed protein bar (or topping of choice)
Bake for 20-25 minutes, then cool completely.
